Sardines are small, oily saltwater fish belonging mainly to the herring family. They have tender, flavourful flesh and are eaten fresh, grilled, fried, baked or preserved, particularly canned in oil, brine or sauces. Sardines are rich in protein and omega-3 fatty acids and, when eaten with their soft edible bones, are also a good source of calcium.
